Fun-gal Farms is a small, independent farm cultivating seasonal specialty mushrooms for restaurants and farmers’ markets around Pittsburgh.

The farm

A one-woman mushroom farm with a chef’s eye.

Holly Scott started Fun-gal Farms in 2020 after years in Pittsburgh’s culinary world, including work as a wine representative and time with the Big Burrito Restaurant Group. The farm began in a basement in Ben Avon and now grows out of a climate-controlled space in McKees Rocks.

Mycelium starts in Petri dishes and is tended in a humid, carefully held room until fruiting. Outdoor beds follow the seasons. Offerings change with the weather and the kitchen calendar — Phoenix Oyster, Lion’s Mane, Pioppino, Nameko, Beech, Turkey Tail, and whatever else is at its best that week.

The work is small on purpose. Each flush is harvested by hand and sold while it still looks like it belongs on a plate.

What we grow

Seasonal gourmet varieties

Availability rotates. If you need a specific mushroom for a menu, ask — we can often put a block in the queue.

  • Lion’s Mane mushroom with cascading white spines

    Lion’s Mane

    Hericium erinaceus. Shaggy, seafood-like texture. Excellent pan-seared, in stir fry, or pulled like crab.

  • Cluster of peach-colored phoenix oyster mushrooms

    Phoenix Oyster

    Pleurotus pulmonarius. Coral to peach caps, mild and versatile. A reliable weeknight and restaurant staple.

  • Cluster of blue oyster mushrooms

    Blue Oyster

    Pleurotus ostreatus. Steel-blue ruffles that cook down tender and savory. Beautiful on a raw bar display, better in the pan.

  • Bouquet of pioppino mushrooms with long stems

    Pioppino

    Cyclocybe aegerita. Firm, nutty black poplar mushrooms that hold their shape in high heat.

  • Glossy amber nameko mushrooms

    Nameko

    Pholiota nameko. Amber caps with a natural sheen. Classic in broths, miso, and butter-forward sautés.

  • Cluster of white beech mushrooms

    Beech

    Ivory clusters with a clean crunch. Mild enough for kids, sturdy enough for a hot wok.

We also fruit Turkey Tail and other seasonal varieties, including golden and branched oysters, when the room and the weather agree.

Fun-gal Farms supplies gourmet mushrooms to local restaurants. Past and present kitchen partners have included places that cook seasonally and want produce that still looks alive when it hits the pass.

We harvest to order when we can, pack for the week’s service, and talk through substitutions when a flush runs short. If you are building a special or a standing side, email the farm with volume, preferred varieties, and delivery days.

When the market season is on, we sell direct around the city. Mixed boxes, single varieties, and the occasional grow bag go out while they are still firm and fragrant.
